  • 200 g grated cheese (e.g., Gouda or Emmental)

  • 200 ml cream

  • 1 onion

  • 1 garlic clove

  • Salt, pepper, and nutmeg to taste

  • Butter to grease the dish

Instructions:

  1. Preparation: Preheat the oven to 200°C (400°F). Finely chop the onion and garlic and sauté them in a pan with some butter. Cut the bacon or ham into small pieces and add to the onions and garlic, sautéing until the bacon is lightly browned.

  2. Prepare the potatoes: Peel the potatoes and slice them very thinly.

  3. Layering: Grease your Polish pottery baking dish with a little butter. Layer the potato slices in the bottom, then add the bacon and onion mixture and some cheese. Continue layering until all ingredients are used up.

  4. Make the cream sauce: Mix the cream with salt, pepper, and nutmeg, and pour it evenly over the gratin.

  5. Baking: Bake the gratin for about 45-50 minutes, until the potatoes are tender and the top is golden. Optionally, sprinkle some extra grated cheese on top and bake for another 10 minutes if you want a crispier crust.

  • 500 g flour (wheat flour or mixed flour)

  • 10 g dry yeast

  • 1 tsp sugar

  • 300 ml lukewarm water

  • 2 tbsp olive oil

  • 1 tsp salt

Instructions:

  1. Activate the yeast: Mix the lukewarm water with sugar and dry yeast. Let it sit for about 10 minutes, until the yeast starts to foam.

  2. Make the dough: Sift the flour into a large bowl, add salt, and pour in the yeast mixture and olive oil. Knead everything into a smooth dough.

  3. Let the dough rise: Cover the dough and let it rise in a warm place for about 1 hour, or until it has doubled in size.

  4. Baking: Knead the dough again and place it in your Polish pottery baking dish. Bake the bread in the preheated oven at 220°C (430°F) for about 30-35 minutes, or until the bread has a golden crust.

  5. Cooling and serving: Let the bread cool for a few minutes, then enjoy it fresh. It’s perfect as an accompaniment to soups or as part of main dishes.
